Torrejas de Bacalao

INGREDIENTES

• ½ libra [0.22 kg] de bacalao salado
• 1 galón [4 lt] de agua (o más)
• 3 cucharadas de leche
• 4 cucharadas de fécula de maíz (maicena)
• 1 cucharadita de puerro picado (opcional)
• 1 cucharadita de perejil picado
• 2 huevos
• 1 pizca de azúcar
• ¼ ají morrón cortada en cubos muy pequeños
• ½ cebolla pequeña cortada en cubos muy pequeños
• ¼ taza de aceite

INSTRUCCIONES

1. Remoja el bacalao en abundante agua por 3 a 4 horas.
2. Hierve el bacalao en agua limpia hasta que se empiece a deshacer.
3. Cambia el agua y remoja de nuevo por media hora si todavía está muy salado.
4. Desmenuza el bacalao muy finamente.
5. En un recipiente profundo mezcla el bacalao, leche, fécula, puerro, perejil, huevo, azúcar, ají y cebolla.
6. Si el bacalao se desaló completamente en el paso 3 añade una pizca de sal.
7. En un sartén calienta el aceite y vierte la mezcla una cucharada a la vez para hacer tortas pequeñas.
8. Fríe las tortas hasta que se doren en ambos lados.
9. Deja reposar en una toalla de papel para eliminar el exceso de aceite. Sirve caliente.
